Passed Hors d’Oeuvres

Fried Italian Cheese and Calamari Tower with lemon, roasted garlic,

basil and horseradish aioli

Creole Italian Sausage Mini Burger dressed with crisp lettuce, shallots, blackened roma tomatoes and a sun-dried tomato and fresh sage mayo

Salad

Roman Blackened Beef Carpaccio topped with pickled artichokes, hearts of palm,

sun-dried tomatoes, roasted garlic, and feta cheese and served with

herbed foccacia cracker and horseradish oregano crema

Cheese Course

Pine Nut Crusted Mini Blue cheese and Herbed boursin Cheesecake

set atop a toasted Feliciana yellow tomato coulis and fried basil

Entrée

Saffron, Pesto, Louisiana Seafood and Mussel Bouillabaise

set atop Southern mozzarella, tomato, and prosciutto grits and topped with

garden basil crusted Gulf Mahi and a thyme parmesan tuile crisp

Dessert

Toasted Pecan Tiramisu served with a New Orleans praline sauce

and a Louisiana blackberry coulis
